This dish, Cape Malay Chicken Curry, is a fragrant and tasty take on South African food. A rich sauce that goes well with tender chicken is made from a mix of spices and creamy coconut milk.
Ingredients: 500g chicken thighs, diced. 2 onions, finely chopped. 2 cloves garlic, minced. 1 tablespoon ginger, grated. 2 tablespoons Cape Malay curry powder. 1 teaspoon ground turmeric. 1 teaspoon ground coriander. 1 teaspoon ground cumin. 400ml coconut milk. 2 tomatoes, chopped. 1 tablespoon vegetable oil. Salt and pepper to taste. Fresh coriander leaves for garnish.
Instructions: In a big pot, heat the oil over medium-low heat. To make the onions soft, add them and cook. Put in the spices, garlic, and ginger. Wait two minutes until the food smells good. Add the chicken and cook it all the way through. Add the tomatoes and coconut milk. Add pepper and salt. Allow the sauce to thicken and the chicken to be fully cooked for 20 to 25 minutes. Add fresh coriander leaves as a garnish before serving.

‘Every Face tells a different story,’ (2011), Bo-Kaap, Nur al-Islam Mosque, By Sami Fortune...This is a picture of a wedding ceremony taking place in the second oldest mosque in South Africa at the heart of the Cape Muslim community in the Bo-Kaap area of Cape Town.
The photograph is anchored at the center with a handshake between the groom and the Imam or Muslim prayer leader conducting the ceremony. The groom stairs intently symbolizing the importance of the ceremony and perhaps he is staring into the future and imagining his new life. To his right can be seen the recoding lights of a wireless microphone with both red and green showing also symbolizing the precieved uncertainty at the outcome of this important life event.
