Instructions: Mix the flavored and unflavored gelatins with 1/2 cup of cold water in a mixing bowl. Give it ten minutes to bloom. Put the corn syrup, granulated sugar, and the remaining 1/2 cup of cold water in a saucepan. Stir over medium heat until a candy thermometer registers 240F 115C in the mixture. This phase is known as softball. Mix on low speed and carefully pour the hot sugar syrup into the bloomed gelatin mixture. Given how hot it will be, exercise caution. Once the mixture is thick and fluffy, increase the mixer speed to high and beat for ten to fifteen minutes. At this point, if desired, you can add flavor extracts and food coloring. Coat a 9 by 13-inch baking dish with cooking spray, then sprinkle powdered sugar over it. Transfer the marshmallow mixture into the dish that has been prepared and use a greased spatula to spread it evenly. Allow the mixture to sit at room temperature for at least 4 hours, or even overnight. After the marshmallows have set, cut them into the desired shapes with a knife or cookie cutters.
