Ingredients: 1 cup red beans, soaked overnight. 1 cup rice. 1 onion, diced. 1 bell pepper, diced. 2 cloves garlic, minced. 1 lb smoked sausage, sliced. 4 cups chicken broth. 1 teaspoon Cajun seasoning. 1 bay leaf. Salt and pepper to taste. Green onions for garnish.
Instructions: Add the onion, bell pepper, and garlic to a large pot and saut until the ingredients are soft. Sausage slices should be added and cooked until browned. Add the rice, chicken broth, bay leaf, Cajun seasoning, salt, and pepper after the red beans have been soaked. Once the mixture reaches a boil, lower the heat, cover it, and simmer the mixture for 25 to 30 minutes, or until the rice is cooked and the beans are soft. Before serving, take out the bay leaf and add some chopped green onions as a garnish.
