Uno de los dulces mexicanos más famosos en México, es la cajeta. Y Celaya es reconocida como la capital de la cajeta. La importancia de este dulce es tan grande, que está presente en el escudo de armas de la ciudad, en el cual aparece la inscripción en latín “De Forti Dulcedo” que significa “de los fuertes es la dulzura”.

En Celaya podrás disfrutar de la Ruta de la Cajeta. En este circuito no hay un inicio ni un fin, es al gusto; y en él, hay más de 60 productores y la mayoría de ellos, brindan la oportunidad de conocer el proceso de elaboración.

A lo largo de la ruta conocerás el proceso para elaborar la auténtica cajeta celayense, incluso, en algunas fábricas podrás participar en el proceso de esta tradicional receta hecha en un cazo de cobre con leche de cabra.

Además, podrás conocer increíbles detalles sobre este dulce, como que su nombre proviene de los pequeños contenedores de madera llamados “cajetes” perfectos para su transportación y disfrute.

Durante el recorrido, también encontrarás variadas presentaciones de este dulce, lo que te permitirá saber lo versátil que se vuelve en la repostería. La tradicional cajeta se puede disfrutar en diversos sabores, como: natural, vainilla, envinada, quemada, con toques de fresa o chocolate, e inclusive, endulzada con stevia. De igual manera, deleita tu paladar con la gran variedad de dulces que se elaboran con la cajeta, tales como: jamoncillos, obleas, chiclosos y mucho más.

Algunas de las fábricas y tiendas tradicionales que puedes visitar en este recorrido son: La Tradicional de Salgado, La Reyna o El Caballo Sin Rival. En esta última, también podrás realizar talleres como: elaboración de cajeta, elaboración de cajete, dorado de cajeta o elaboración de juguete mexicano.
