Enjoy the rich flavors of Cafe Du Monde coffee with this smooth ice cream that has cute chocolate "freckles" on top of it. Great for coffee lovers who want a cool treat with a bit of sweetness.
Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 1/4 cup Cafe Du Monde coffee grounds. 4 large egg yolks. 1 teaspoon vanilla extract. 1/2 cup semi-sweet chocolate chips.
Instructions: In a saucepan, heat the heavy cream, milk, sugar, and coffee grounds over medium heat until just simmering, stirring occasionally. In a separate bowl, whisk the egg yolks. Once the cream mixture is simmering, slowly pour a small amount into the egg yolks while whisking constantly to temper the eggs. Pour the egg mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon about 5-7 minutes. Do not boil. Remove from heat and stir in the vanilla extract. Strain the mixture through a fine-mesh sieve into a clean bowl to remove the coffee grounds. Cover and chill the mixture in the refrigerator for at least 4 hours or overnight. Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions. During the last few minutes of churning, melt the chocolate chips in the microwave or using a double boiler. Drizzle the melted chocolate into the ice cream as it churns to create 'freckles'. Transfer the churned ice cream to a freezer-safe container and freeze until firm.
