A hearty and comforting chicken stew that is slowly cooked in a crockpot. It's great for busy days when you want a tasty meal ready when you get home.
Ingredients: 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces. 3 carrots, sliced. 2 potatoes, diced. 1 onion, chopped. 2 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 2 cups chicken broth. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste.
Instructions: Chicken, potatoes, onions, carrots, and garlic should all be put in the slow cooker. Also add chicken broth, thyme, rosemary, salt, and pepper. Dice the tomatoes and add their juices. Mix the ingredients together. Set the cooker to low for 6 to 8 hours or high for 3 to 4 hours. Remove the lid and cook until the chicken is done and the vegetables are soft. If you need to, change the seasonings before serving.
