Indulge in the flavors of classic Tiramisu with these delightful Tiramisu Cupcakes. These moist and coffee-infused cupcakes are topped with a creamy mascarpone frosting and a hint of cocoa powder for that perfect Italian dessert experience.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup whole milk. 2 tablespoons instant espresso powder. 1 tablespoon hot water. 1/4 cup brewed espresso, cooled. 1/4 cup Kahla or coffee liqueur. 1/4 cup mascarpone cheese. 1/4 cup heavy cream. 1/4 cup powdered sugar. 1/2 teaspoon cocoa powder for dusting. Ladyfingers optional, for decoration.
Instructions: Warm up the oven to 350F 175C and put paper liners in a cupcake pan. Mix the instant coffee powder with hot water in a small bowl. Set the bowl aside to cool to room temperature. Put the flour, baking powder, and salt in a different bowl and mix them together. Then, set the bowl aside. Melt the butter and mix it with the sugar in a large bowl until the mixture is light and fluffy. One egg at a time should be added while beating, and the vanilla extract should be mixed in. Start by adding the dry ingredients to the wet ingredients, then the milk, making sure to start with the dry ingredients and end with the milk. Don't mix any further than that. Add the Kahla and brewed coffee that has cooled down. The batter should be about two thirds of the way up each cupcake liner. It's done when a toothpick stuck in the middle of a cupcake comes out clean after 18 to 20 minutes of baking. After the cupcakes have cooled in the pan for a few minutes, move them to a wire rack to cool all the way down. Cream mascarpone cheese, heavy cream, powdered sugar, and brewed espresso together until light and fluffy. This is the frosting for the Tiramisu. Spread or pipe the Tiramisu frosting on the cupcakes after they have cooled. Sprinkle cocoa powder on top of the cupcakes and, if you want, decorate them with ladyfingers. Put the cupcakes in the fridge for at least an hour before you serve them so that the flavors can mix. Have fun with your tasty Tiramisu cupcakes!
