These crispy air fryer chips are a great way to enjoy your bumper crop. You don't need to bread the chicken; all you need is a little seasoning and a hot air fryer.
Ingredients: 4 cups of bumper crop vegetables e.g., zucchini, sweet potatoes, or butternut squash. 2 tablespoons olive oil. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon paprika optional for added flavor. Cooking spray for the air fryer basket.
Instructions: Wash and peel the bumper crop vegetables, if necessary. Cut them into thin, uniform slices or strips. In a large bowl, toss the vegetable slices with olive oil, salt, pepper, and paprika if using. Make sure the vegetables are evenly coated with the seasonings. Preheat your air fryer to 375F 190C for 5 minutes. Lightly grease the air fryer basket with cooking spray to prevent sticking. Place a single layer of seasoned vegetable slices in the air fryer basket. Be sure not to overcrowd the basket; you may need to cook in batches. Air fry the vegetables at 375F 190C for 12-15 minutes, shaking the basket halfway through the cooking time. Cook until the chips are golden brown and crispy. Remove the crispy chips from the air fryer, and let them cool slightly before serving. They will become even crispier as they cool down. Repeat the process with any remaining vegetable slices. Serve your crispy bumper crop air fryer chips as a delicious and healthy snack or side dish.
