These rolls are both healthy and tasty. The quinoa and coconut taste great together. These rolls are gluten-free and full of flavor. They're great for breakfast or as a snack.
Ingredients: 1 cup quinoa, rinsed and cooked. 1 cup shredded coconut. 3/4 cup coconut flour. 1/2 cup coconut oil, melted. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/2 teaspoon baking powder. A pinch of salt. Coconut flakes for garnish.
Instructions: Preheat the oven to 350F 175C. In a large bowl, combine cooked quinoa, shredded coconut, coconut flour, melted coconut oil, maple syrup, vanilla extract, baking powder, and a pinch of salt. Mix well until a dough forms. Scoop spoonfuls of the dough and shape them into rolls. Place them on a parchment-lined baking sheet. Bake in the preheated oven for 15-18 minutes or until the rolls are golden brown and firm to the touch. Remove from the oven and let them cool for a few minutes. Garnish the rolls with coconut flakes before serving. Enjoy these delicious Coconut Quinoa Rolls!
