Get your mom a nice breakfast in bed for Mother's Day as a surprise! Adding fresh berries and sweet maple syrup to these fluffy pancakes will make her day even better.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter. 1 teaspoon vanilla extract. Fresh berries for garnish. Maple syrup for drizzling.
Instructions: Mix the flour, sugar, baking powder, baking soda, and salt together in a bowl. Add the egg, melted butter, vanilla extract, and buttermilk to a different bowl, and mix them together using a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Don't mix it too much; lumps are fine. Warm up a nonstick griddle or skillet over medium-high heat. Use cooking spray or more melted butter to lightly coat the pan. For every pancake, put 1/4 cup of pancake batter on the griddle. Start cooking when the top starts to bubble. Then turn it over and cook until both sides are golden brown. Put the pancakes on a plate and keep them warm while you cook the rest of the batter. Spread maple syrup on top of the pancakes and serve with fresh berries. Enjoy your tasty pancakes you made yourself for Mother's Day!
