A tasty dish of roasted chicken with fragrant garam masala, served with toasted bread and buttery sauted cabbage.
Ingredients: 1 whole chicken, about 4-5 lbs. 2 tablespoons garam masala. 2 tablespoons olive oil. Salt and pepper to taste. 1 small cabbage, thinly sliced. 4 tablespoons butter. 4 slices of bread, toasted.
Instructions: Preheat oven to 375F 190C. Rinse the chicken and pat it dry with paper towels. In a small bowl, mix garam masala, olive oil, salt, and pepper. Rub the garam masala mixture all over the chicken, including under the skin. Place the chicken in a roasting pan and roast for about 1 hour and 30 minutes, or until the internal temperature reaches 165F 74C. While the chicken is roasting, melt butter in a skillet over medium heat. Add sliced cabbage to the skillet and saut until tender, about 8-10 minutes. Once the chicken is done, remove it from the oven and let it rest for 10 minutes before carving. Serve the roasted chicken with bread slices and buttered cabbage. Enjoy!
