A delightful Mediterranean fish stew with the rich flavor of saffron, paired with a garlicky aioli for a truly satisfying meal.
Ingredients: 1.5 lbs white fish fillets, cut into chunks. 1 cup cherry tomatoes, halved. 1 fennel bulb, thinly sliced. 1 onion, finely chopped. 3 cloves garlic, minced. 2 cups fish stock. 1 cup dry white wine. 1/4 cup olive oil. 1/2 cup fresh parsley, chopped. Salt and pepper to taste. Saffron threads optional.
Instructions: In a large pot, saut onions and garlic in olive oil until softened. Add fennel and cherry tomatoes, cook for another 5 minutes. Pour in fish stock and white wine, bring to a simmer. Season with salt, pepper, and add saffron threads if desired. Gently place fish chunks into the pot and simmer until cooked through. Stir in fresh parsley and adjust seasoning to taste. Serve hot with a dollop of aioli on top.

Flour the Sole and dip in egg wash. Saute Sole in a good grade of oil. Slice banana lengthwise, dip in flour and egg wash, and saute with the Sole. Season with salt and pepper to taste. Sprinkle lemon juice, wine, and water around the edges of the pan. Saute fish until it is done. Remove fish and banana and place on a warm platter. Heat pan juices and pour over the fish. ingredienti per 5/6 persone _1 /2 cipolla media tritata grossolanamente , 1 foglia di alloro , 1 ciuffetto di prezzemolo , 25 gr di sale (3 cucchiaini) , 1 kg. di merluzzo tagliato a grosse fette , 80 gr di burro , 1/2 grossa cipolla tagliata a fettine sottili , 1 cetriolo di media grandezza pelato e tagliuzzato finemente 2 pomodori di media grandezza svuotati dei semi e tagliati grossolanamente , pepe ,1 cucchiaio di capperi lavati e tagliuzzati , 1 limone tagliato a fettine a cui va tolta la buccia - poco prezzemolo tritato , 6 olive nere private del nocciolo e tagliate a metà.
METHOD _
Versare 1 litro e 1/4 di acqua in una pentola. Aggiungere le cipolle tritate, l'alloro, il ciuffetto di prezzemolo ed un cuchiaino di sale. Portare a bollore e aggiungere il pesce. Abbassare il fuoco e lasciare sobbollire per 6-7 minuti. Togliete il pesce e tagliatelo a pezzetti. Passare il brodo attraverso un colino a fitte maglie e con il dorso di un cuc¬chiaio schiacciare le verdure cotte perché il succo coli nel brodo. Sciogliere il burro in una pirofila da portata. Aggiungere la cipolla affettata e farla cuocere a fuoco moderato, girandola spesso perché non prenda colore, per circa 8 minuti o finché la cipolla sarà cotta (appassita). Aggiungere il cetriolo sminuzzato e i pomodori tritati e lasciare cuocere per qualche minuto; poi versare il brodo di pesce, con il restante sale e pepe e il pesce a fette. Fate prendere il bollore e togliete dal fuoco. Aggiungere i capperi, le fette di limone, il prezzemolo tritato e le olive snocciolate e tagliate a metà. Assaggiare per assicurarvi che non manchi del sale e servire nella stessa casseruola. +++++++++ Monfish bourride -
ingredienti e dosi _1 Monkfish or burbot weighing 1 kg. -2 Spoonfuls of olive oil. -1 Bouquet garni. -1 Head fennel. - 1 lg Onion. -2 l Water. -1 Liqueur cup of Pastis. -Aioli 20 sl Grilled or toasted bread. -Salt; pepper.

Prepare the fish stock: peel and finely chop the onion, wash and cut the fennel in thin strips. Fry these vegetables lightly in the oil. When they are golden, add the central bone of the fish and the bouquet garni. Cover with water. Season. Simmer for about 25 minutes, then skim.When the stock is ready, strain the liquid, add the cup of Pastis and return to the heat.Cut the fish into cubes and put in the stock. Cook over a low heat for 10 minutes.When the fish has turned white, remove it carefully with a skimming ladle. Reduce the stock to two-thirds, add the aioli and stir to thicken the sauce. Pour the soup over the fish pieces, and decorate with the toasted bread. Serve hot.
