The classic children's book The Cat in the Hat gave me the idea for these fun Cat in the Hat Cupcakes. Like the famous cat's hat, they have a red and blue cake base with white frosting and bright sprinkles on top.
Ingredients: 1 box of white cake mix. 3 large eggs. 1/2 cup vegetable oil. 1 cup milk. 1 tsp vanilla extract. Red food coloring. Blue food coloring. White frosting. Red sprinkles. Blue sprinkles. Cat-shaped cupcake toppers optional.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with paper liners. In a large mixing bowl, combine the white cake mix, eggs, vegetable oil, milk, and vanilla extract. Mix until well combined. Divide the batter into two equal parts in separate bowls. Add red food coloring to one bowl and blue food coloring to the other, mixing each until you achieve the desired vibrant colors. Fill each cupcake liner with a spoonful of red batter and then a spoonful of blue batter until they are about two-thirds full. Use a toothpick or a skewer to swirl the colors together gently, creating a marbled effect. Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack. Once cooled, frost each cupcake with white frosting, creating a hat-like appearance on top. Sprinkle red and blue sprinkles on top of the frosting to mimic the Cat in the Hat's iconic hat stripes. If desired, add cat-shaped cupcake toppers to complete the theme. Serve and enjoy your Cat in the Hat Cupcakes!
