These Blackberry Jam Cupcakes are a delightful treat, combining the sweetness of blackberry jam with a moist and tender cupcake. Topped with fresh blackberries, they are perfect for any occasion.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup whole milk. 1/2 cup blackberry jam. 1 cup fresh blackberries for garnish. Powdered sugar for dusting, optional.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Mix the flour, baking powder, and salt together in a medium-sized bowl using a whisk. Put away. It will take about two minutes to make the butter and sugar light and fluffy when mixed together in a separate large bowl. One at a time, add the eggs and beat well after each one. Add the vanilla extract and mix well. Slowly add the dry ingredients to the wet ones, mixing them in with the milk every so often. Start with the dry ingredients and end with the milk. Don't mix any further than that. Mix the blackberry jam into the batter slowly until it's spread out evenly. Fill each cupcake liner about two thirds of the way to the top with batter. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Take the cupcakes out of the oven and let them cool for 5 minutes in the pan before moving them to a wire rack to cool all the way through. After the cupcakes have cooled, put a fresh blackberry on top of each one and, if you want, dust them with powdered sugar. Have fun with your tasty Blackberry Jam Cupcakes!

Remove from heat and stir in chia seeds. Let the mixture sit for about 10 minutes to thicken. Transfer the jam to a jar or container and let it cool completely before refrigerating. Store in the refrigerator for up to one week.

Ingredients: 1 cup blackberries. 1/2 cup sugar. 1 tablespoon lemon juice. 1 cup buttermilk. 1 cup heavy cream. 1/2 cup sugar. 1 teaspoon vanilla extract. 12 sugar cookies store-bought or homemade.
Instructions: Put blackberries, 1/2 cup sugar, and lemon juice in a saucepan. Over medium heat, stir the mixture every so often for about 10 to 15 minutes, or until it thickens and becomes jam-like. Take it off the heat and let it cool down all the way. Mix buttermilk, heavy cream, 1/2 cup sugar, and vanilla extract in a bowl with a whisk until the sugar is completely mixed in. Put the mixture into an ice cream maker and churn it according to the machine's directions until it's the consistency of soft serve. Put the churned ice cream in a container that can go in the freezer and swirl in the blackberry jam. Put it in the freezer for at least four hours, or until it gets hard. To make an ice cream sandwich, put a lot of ice cream on a sugar cookie and then put another cookie in the middle of it. You can serve them right away or wrap each one in plastic wrap and freeze them until you're ready to serve them.
