These delectable ice cream sandwiches combine the classic flavors of black and white cookies with creamy ice cream.
Ingredients: 1 cup all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/4 cup unsalted butter, softened. 1/2 cup granulated sugar. 1 large egg. 1/2 teaspoon vanilla extract. 1/4 cup whole milk. 1/4 cup cocoa powder. 1 1/2 cups vanilla ice cream. 1 1/2 cups chocolate ice cream.
Instructions: Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat butter and sugar until creamy. Add egg and vanilla extract, mix until combined. Gradually add the flour mixture and milk, alternating, until a dough forms. Divide the dough in half. Mix cocoa powder into one half. Roll out each dough between parchment paper and chill for 15 minutes. Cut out cookies using a round cutter. Bake for 10-12 minutes, then cool. Place a scoop of vanilla ice cream on a vanilla cookie, top with a chocolate cookie. Repeat with chocolate ice cream and remaining cookies. Freeze the ice cream sandwiches until firm.
