How new a reader are we talking here? YA and graphic novel are both great ways to get into reading. YA is written for the teen crowd so it's not going to have super complicated wordplay. That makes very approachable for the most part and it's also very popular with adult readers.
Graphic novels are also a great way to get into reading more. All the 'action' is in the art so it's got a lower word count and something else to catch the eye.
Are there any genres you like? Sci fi? Romance? Thriller? Drama?
Far Out: Recent Queer Science Fiction and Fantasy, edited by Paula Guran is a sci fi anthology where all the stories are queer in one way or another. If you don't like one you can just skip to the next so it's not a huge commitment.
Young Men in Love, edited by Joe Glass and Matt Miner is a comic anthology with 20 comics in one book, there's a variety of settings and genres you can always skip the ones that don't interest you.
Icebreaker by A. L. Graziadei is a YA contemporary M/M romance about hockey players.
One I've read more recently is Not My Father's Son: A Memoir by Alan Cumming, the actor. He's a bisexual man, though the book is about his fraught relationship with his awful father.
I've also just started Lucky Day by Chuck Tingle, yes that Chuck Tingle. All his more mainstream horror novels, Straight, Camp Damascus, and Bury You Gays are great. They are horror so expect bad things will be happening to our MCs. The rest of his work is also queer, but most are very explicit novelettes or novellas, if you search him you will see those first.

If you have a US library card you can use Libby to check books out onto your phone and read them there, which is great for not spending money and keeping your reading selection on the down low if you need to do that.
