The winner of the vote: Mango! (please ignore that the poll is both still up and a three way tie, that is unimportant) For my own amusement, I wrote a small food review about it. I took two pictures as I wasn't sure which was better, plus it better captures the presence of the dish. If the quality is low, please blame my old phone
Bingsu itself is a Korean shaved (milk) ice dessert, which consists of the base. In this one there's fresh mango chunks, a condensed mango juice syrup, a scoop of mango ice cream, and almond slices topping it. On the very top there is a small piece of mango mousse cake.
The flavour of the bingsu itself is much more lighter, airier, and softer than any sort of ice cream. It melts faster than ice cream for comparison and as it does so it blends more with the mango syrup. Generally the sweetness of the bingsu is mild and delicate, with the flavour of the dish (understandably) focusing on the fresh mango chunks and the accompanying mango-themed toppings.
I must say that the mango mousse cake was delightfully soft and fluffy, by far worth it to get some by its own! The layers were put together with obvious care, with the mango mousse itself neither being overwhelming nor understated.
The bingsu place takes great care in putting together their creations, if you ask nicely (which I didn't want to bother them this time, I had other things to do) you could watch them put together the bingsu (or any of the various other items you can order there). They make it all fresh to order which means there is a waiting time (a side effect of bingsu truthfully), with in-house baked goods you can get as well. In the past I've tried the strawberry bingsu which is equally delightful as the mango bingsu (albeit a little sweeter).
Overall very highly rated! I never had fresh mango growing up as it's rather expensive where I live (although at one foster home we briefly had canned mango juice, as odd as it may sound it was quite a memorable highlight for younger me), so getting it here was quite a treat! If you're huge on sugar perhaps it may be a bit on the milder side for you, but that only means they let the real mango fruit shine as a star of the dish in my opinion.
