Rolinhos de beringela recheados com ricotta vegan
2 beringelas
1 fio de azeite
2 dentes de alho picados
Sal e pimenta a gosto
Manjericão fresco
Molho de tomate caseiro
Ricotta vegan:
200g de tofu firme
50g de nozes
Um pouco de bebida vegetal
Sumo e raspas de ½ limão
Sal e pimenta a gosto
1 dente de alho
Algumas folhas de tomilho fresco
Preparação:
Corte as beringelas em fatias.
Disponha num tabuleiro, tempere com sal, pimenta e azeite.
Asse a 200°C por 20 minutos.
No processador, triture levemente o tofu, as nozes e a bebida vegetal.
Misture com o restante dos ingredientes da ricotta.
Coloque um pouco do recheio sobre cada fatia de beringela (já assada) e enrole bem.
Espalhe um pouco de molho de tomate no fundo de uma travessa.
Disponha os rolinhos recheados sobre o molho.
Cubra com o restante do molho, da ricotta e um fio de azeite.
Cubra com papel alumÃnio e asse a 200°C por 30 minutos.
Retire o papel alumÃnio e asse por mais 10 minutos.
