This slow cooker beef chili is hearty, flavorful, and perfect for a cozy meal. The beef becomes wonderfully tender as it simmers in a rich tomato and bean base infused with spices.
Ingredients: 2 lbs beef chuck, cubed. 1 onion, chopped. 3 cloves garlic, minced. 2 bell peppers, diced. 1 can 28 oz crushed tomatoes. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz black beans, drained and rinsed. 1 cup beef broth. 2 tablespoons chili powder. 1 tablespoon cumin. 1 teaspoon paprika. Salt and pepper to taste.
Instructions: In a skillet, brown the beef cubes over medium-high heat. Transfer the beef to a slow cooker. In the same skillet, saut the onion, garlic, and bell peppers until softened. Add the sauted vegetables to the slow cooker. Pour in the crushed tomatoes, kidney beans, black beans, and beef broth. Season with chili powder, cumin, paprika, salt, and pepper. Stir everything together until well combined. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors have melded together. Serve hot, optionally garnished with shredded cheese, sour cream, and chopped cilantro.
