These Cajun shrimp skewers on a grill are full of strong flavors and would be great as an appetizer or main dish at a barbecue. Cajun seasoning gives the tasty shrimp and bright vegetables a spicy kick.
Ingredients: 1 pound large shrimp, peeled and deveined. 2 tablespoons Cajun seasoning. 1/4 cup olive oil. 2 cloves garlic, minced. 1 lemon, juiced. 1 red bell pepper, cut into chunks. 1 green bell pepper, cut into chunks. 1 red onion, cut into chunks. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, combine the Cajun seasoning, olive oil, minced garlic, and lemon juice. Mix well to create a marinade. Add the peeled and deveined shrimp to the marinade, making sure they are well-coated. Cover and refrigerate for at least 30 minutes. Preheat your grill to medium-high heat. Thread the marinated shrimp, red bell pepper chunks, green bell pepper chunks, and red onion chunks onto the soaked wooden skewers, alternating between them. Place the skewers on the preheated grill and cook for 2-3 minutes per side, or until the shrimp turn pink and slightly charred. Ingredients: 1 lb large shrimp, peeled and deveined. 2 tbsp ghee or clarified butter. 3 cloves garlic, minced. 1/4 cup Paleo-friendly BBQ sauce. 1/4 cup chicken broth. 1 tbsp lemon juice. 1 tsp smoked paprika. 1/2 tsp cayenne pepper. Salt and black pepper to taste. Chopped fresh parsley, for garnish.
Instructions: Melt the ghee or clarified butter in a pan over medium-low heat. Add the minced garlic and cook for about one minute, until the garlic smells good. BBQ sauce, chicken broth, lemon juice, smoked paprika, and cayenne pepper should all be mixed in. Put shrimp in the pan and season them with salt and black pepper. For three to four minutes, or until they turn pink and opaque, cook the shrimp. Take the pan off the heat and add the chopped parsley as a garnish. Enjoy while hot!

For chimichurri dipping sauce:. 1 cup fresh parsley, chopped. 4 cloves garlic, minced. 1/4 cup red wine vinegar. 1/2 cup extra virgin olive oil. 1 tablespoon dried oregano. Salt and pepper to taste.
Instructions: Preheat the grill to medium-high heat. Wrap each shrimp with a half slice of bacon and secure with a toothpick. Brush the bacon-wrapped shrimp with BBQ sauce. Grill the shrimp for 2-3 minutes on each side or until the bacon is crispy and the shrimp is cooked through. Meanwhile, prepare the chimichurri dipping sauce by combining parsley, garlic, red wine vinegar, olive oil, oregano, salt, and pepper in a blender or food processor. Blend until smooth.
