So a couple weeks ago I made snickers and Reese’s cupcheesecakes for my partner’s birthday. I used the real candies inside of the mini cheesecakes. This was wonderful for the Reese’s and worked really well, but the mini snickers got hard in the fridge and fell out when you took the first bite. So I decided I was going to make my own version of snickers cupcheesecakes with caramel inside instead of a mini snickers.
I set out to do it today, because I needed something to do. Turns out neither the Safeway nor the Walmart has chewy caramel candies, so I decide I would go a step further and make my own.
Did I have all the ingredients for making caramel?
Not at all.
Do I want to go to the store again?
Nope.
So I improvised…. I found a recipe that calls for condensed milk instead of heavy cream. Cool I had one can left. Then, I guesstimated that honey is similar enough to corn syrup. I made it and it’s delicious! But it tastes like honey candy instead of caramel 😅
So anyway it turns out I’m going back to the store later 😂
Today I learned that if you make a smaller cutout in your sugar cookies and put a small hard candy in the center, the middle becomes like stained glass!
Couldn’t find where to get advocaat over here but I did find recipes so it’s time to try making some because I’m too intrigued by the snowball (and it gives me an excuse to make meringues which I haven’t made since I was probably 14)
Before I forget again I made a cheesecake for a St Patrick's Day Party with my friends. It was beautiful before my husband cut it. It's supposed to be a pot if gold so I used brownies as the crust and added gold dye.

Starting to get better with texture! These cookies turned out a bit less sweet than i would have liked but are still decadently chocolatey, and i’m really really really delighted to be finding the time to practice baking here and there.
realized i never actually posted pictures of my other adventures from a few weeks ago so here they are! Nutella cupcakes… i also made root beer cupcakes but every time i tried to take a picture of them i would eat them instead so thats my bad. My biggest success baking wise though truly
And the Pride espresso sugar cookies are finished. Playing around with ideas too. Took pictures outside to try to show the glitter i used on a couple. Didn't figure grey would be the hardest to try to make in icing.
So anyway I made hamantaschen today. They're filled with strawberry preserves. I did the folding method as opposed to the pinching method I did last year. It actually helped keep the filling inside.
