The vibrant flavors of lemon, garlic, and fresh thyme come together in this Paleo-friendly lemon-thyme chicken recipe to create a zesty and aromatic dish. Ideal for a tasty weekend barbecue or a quick dinner during the workweek.
Ingredients: 4 chicken breasts. 2 lemons, juiced and zested. 3 cloves garlic, minced. 2 tablespoons fresh thyme leaves. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a bowl, combine lemon juice, lemon zest, minced garlic, thyme leaves, olive oil, salt, and pepper. Place chicken breasts in a shallow dish and pour the marinade over them, making sure they are well coated. Cover the dish and marinate in the refrigerator for at least 30 minutes, or overnight for maximum flavor. Preheat grill or skillet over medium-high heat. Remove chicken from marinade and discard excess marinade. Grill or pan-sear chicken breasts for about 6-8 minutes on each side, or until cooked through and juices run clear. Remove from heat and let rest for a few minutes before serving. Garnish with additional thyme leaves and lemon slices if desired.
