“I really want a unicorn in my story but don’t know what to do with it”
transport animal: maybe it has really high standards over who is allowed to ride it and it is considered a great honor
for fighting: either riding or being accompanied by one into battle with its horn
protecting it from poachers: if unicorns are rare and hunted for the magical properties in their horn, blood, hair, etc., you might have to guard it from attackers!
omens/spiritual messengers: seeing a unicorn may be a symbol for something, as nothing but fate could bring a strong willed creature of magic like a unicorn to steer off its path to be seen by a person otherwise
protectors of the innocent: if someone hurts and attacks the innocent, chances are they might end up impaled on a horn, which could end up saving your protagonist
passing judgment: similarly, they might be known for incredibly good intuition and are said to be able to read souls, so in trials they are used to pass judgment on the accused if the alleged crime warrants it
