The creamy mayonnaise and tangy Dijon mustard hold it all together. This salad is filling and tasty, and it's perfect for a quick and easy keto-friendly meal. Put it on a bed of fresh lettuce leaves to make it taste even better, and enjoy the wonderful mix of tastes and textures!
Ingredients: 2 cups cooked chicken breast, shredded. 1/4 cup mayonnaise. 2 tbsp chopped almonds. 2 tbsp chopped dried apricots. 1 tbsp chopped fresh parsley. 1/2 tsp Dijon mustard. Salt and pepper to taste. Lettuce leaves, for serving.
Instructions: In a mixing bowl, combine the shredded chicken breast, mayonnaise, chopped almonds, chopped dried apricots, chopped parsley, Dijon mustard, salt, and pepper. Mix until all ingredients are well combined and the chicken salad is evenly coated with the dressing. Cover and refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld together. To serve, place lettuce leaves on a plate or bowl, and spoon the apricot almond chicken salad on top. Garnish with additional chopped almonds and parsley if desired, and enjoy!
