This salad has roasted apricots that are sweet, balsamic vinegar that is sour, feta cheese that is creamy, and mint leaves that are fresh. It's a delicious and unique salad that's great for any event.
Ingredients: 6 ripe apricots, halved and pitted. 2 tablespoons honey. 2 tablespoons balsamic vinegar. 2 tablespoons olive oil. Salt and black pepper to taste. 1/2 cup crumbled feta cheese. 1/4 cup fresh mint leaves, chopped.
Instructions: Turn on your oven and heat it up to 375F 190C. Mix honey, balsamic vinegar, olive oil, salt, and black pepper in a small bowl with a whisk. Spread the honey-balsamic mixture over the apricot halves in a baking dish so that the cut sides are facing up. Put the apricots in an oven that has already been heated and roast them for 15 to 20 minutes, or until they are soft and slightly caramelized. Set up your plate or bowl for serving while the apricots roast. When the apricots are done roasting, let them cool a bit before putting the salad together. Put the roasted apricots on the plate or bowl that will be used to serve the salad. Place small pieces of feta cheese and chopped fresh mint leaves on top of the apricots. Pour any honey-balsamic sauce that's still in the baking dish over the salad. If you want, you can add more salt and black pepper to taste. Honey Balsamic Roasted Apricots with Mint and Feta Salad is ready to be served right away.
