Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 1 1/2 teaspoons baking powder. 1 teaspoon salt. 1/2 teaspoon ground cinnamon. 2 large eggs. 3/4 cup whole milk. 2 cups diced apples peeled and cored. Vegetable oil for frying. Confectioners' sugar for dusting. 1/2 cup powdered sugar. 1-2 tablespoons milk. 1/2 teaspoon vanilla extract.
Instructions: In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon. In another bowl, beat the eggs and add the whole milk. Mix well. Gradually add the wet ingredients to the dry ingredients and stir until just combined. Fold in the diced apples. In a large, deep skillet, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350F 175C. Drop spoonfuls of the apple fritter batter into the hot oil, frying them in batches until they are golden brown and cooked through, about 2-3 minutes per side. Remove the fritters from the oil using a slotted spoon and drain them on paper towels. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make a glaze. Drizzle the glaze over the warm apple fritters and dust them with confectioners' sugar. Serve the apple fritters warm and enjoy!
