In a moment of hubris I said, “nah I don’t need a deep fry thermometer” and succeeded in over-browning my #appleciderdoughnuts while leaving them mostly raw in the middle. Absolute trooper @ellebellemagee tried one of the thinner ones that was nearly cooked through and she and @thomasiancampbell both pronounced them delicious. Ingredients: 2 cups apple cider. 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground allspice. 1/4 cup unsalted butter, melted. 2 large eggs. 1/2 cup buttermilk. 1 tsp vanilla extract. Vegetable oil for frying. Cinnamon sugar for coating.
Instructions: In a saucepan, simmer apple cider over medium heat until it reduces to 1/2 cup. Let it cool. In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, and spices. In a separate bowl, mix melted butter, eggs, buttermilk, vanilla, and the reduced apple cider. Combine the wet and dry ingredients until a soft dough forms. Do not overmix. Roll out the dough on a floured surface and cut out doughnut shapes using a doughnut cutter. Heat vegetable oil in a deep fryer or heavy-bottomed pan to 350F 175C. Carefully fry doughnuts in batches, turning them until they are golden brown. Remove and drain on paper towels. While still warm, coat with cinnamon sugar. Serve and enjoy your homemade apple cider doughnuts!

In another bowl, combine the apple cider, applesauce, egg, melted butter or vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be lumpy. Heat oil in a deep fryer or large heavy-bottomed pot to 350F 175C. Using a spoon or doughnut dispenser, carefully drop spoonfuls of the batter into the hot oil. Fry for about 2-3 minutes per side, or until the doughnuts are golden brown and cooked through. Remove the doughnuts with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. In a shallow bowl, mix together the granulated sugar and ground cinnamon for the coating. Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/2 cup unsweetened applesauce. 1/4 cup maple syrup. 1/4 cup apple cider. 2 eggs. 1 teaspoon baking soda. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon sea salt. Coconut oil or cooking spray for greasing. Optional: Coconut sugar and cinnamon for coating.
Instructions: Warm the oven up to 175F 350C. Use cooking spray or coconut oil to grease a doughnut pan. Apple flour, coconut flour, baking soda, cinnamon, nutmeg, and sea salt should all be mixed together in a large bowl. Whisk the applesauce, maple syrup, apple cider, and eggs together in a different bowl until everything is well mixed. Mix the dry and wet ingredients together until you get a smooth batter. Fill up every doughnut pan hole about three quarters of the way to the top with batter. Put it in the oven and bake for 15 to 18 minutes, or until a toothpick stuck in the middle comes out clean. Donuts should cool in the pan for a few minutes before being moved to a wire rack to cool all the way down. No need to: In a small bowl, mix the cinnamon and coconut sugar together. To coat, dip the cooled doughnuts into the mix. Serve and have fun!
