I made my cat a cake.... 😹 My kitten Dexter was the inspiration for this 6 tier cake, rice cereal, gum paste, fondant, rice noodle and edible fabric creation. It is all edible except for 3 dowels and a single wire holding up the wings. Traditional Shortbread
Ingredients
250g unsalted butter
100g caster sugar
300g plain flour
90g rice flour
Method
Preheat oven to 150°C. Brush 2 baking trays with melted butter to grease. Use an electric beater to beat the butter and sugar in a bowl until pale and creamy.
Gradually add the combined flour, beating on low speed until almost combined. Use your hands to bring the dough together in the bowl. Turn onto a lightly floured surface and knead gently until smooth.
Roll out dough on a flat surface until about 1/2 inch thickness, cut out with cookie cutters or a sharp knife into squares. Transfer to lined baking tray.Â
Bake the shortbread in oven, swapping the trays halfway through cooking, for 40 minutes or until light golden. Set aside on the trays for 10 minutes to cool before transferring to a wire rack to cool completely. Cut into wedges to serve.
Day 47 - I started this blog
Today I decided to add a new activity to my quarantine time: this blog.Â
I want to create a place where I can account for all my endeavors as I keep myself sane during this time.Â
During the past month and a half I have had a lot of free time. I am still somewhat confused as to how everything changed so quickly. I had finally found the courage to quit a job I hated and move onto a new one. Somewhere around mid March, right after my birthday, I was told my new contract was paused because no one knew what was going on and they had no way of training me. I was in the middle of visiting my family when I had to suddenly come back to deal with everything. Thankfully, my boyfriend was traveling with me and decided to quarantine with me.Â
I have tried all sorts of baking, I am in the middle of rereading the Harry Potter books and rewatching all the movies, I have finally given into my boyfriend’s wishes of me watching Star Wars for the first time and am in the middle of looking for a new job in the middle of a pandemic.Â
