Enjoy the classic flavors of a Reuben sandwich in a healthier egg roll form. These air-fried Reuben egg rolls are crispy on the outside, filled with lean corned beef, sauerkraut, Swiss cheese, and served with a tangy Thousand Island dressing. They make for a delicious and guilt-free snack or appetizer.
Ingredients: 1 package egg roll wrappers. 1 cup lean corned beef, cooked and shredded. 1 cup sauerkraut, drained and squeezed dry. 1 cup Swiss cheese, shredded. 1/4 cup light Thousand Island dressing. Cooking spray.
Instructions: Get your air fryer ready by heating it up to 375F 190C. One corner of the egg roll wrapper should face you. Place it on a clean surface. Shred some corned beef and put it in the middle of the wrapper. Add some sauerkraut and Swiss cheese. Put a teaspoon of Thousand Island dressing on top of the filling. Tuck the corner that is closest to you over the filling and fold it in tight. Fold the sides in and keep rolling until the egg roll is sealed. To seal the edge, use a small amount of water. Do it again with the rest of the filling and wrappers. Lightly spray cooking spray on the egg rolls and make sure they're covered all over. Make sure the egg rolls don't touch when you put them in the hot air fryer basket. For 8 to 10 minutes, flip them over halfway through the cooking time, or until they are golden brown and crispy. Warm it up and serve it with extra Thousand Island dressing to dip it in. Have fun with your Reuben egg rolls!
