When I first laid eyes on a rack of Berkshire pork chops, it nearly took my breath away.  The amount of beautiful white fat, the tender pink rosy flesh, and the overall structure of this meat...even after working with it for months, I still get that same feeling with each and every rack that I see.  I feel so lucky to work with Kurobuta pork from Snake River Farms.  When you taste a perfectly cooked chop, you'll know what I mean.  At LA Chapter, we like to serve it with broccolini, pickled persimmons, onion jam, and pork jus.  Mouthwatering, eh?
